Cowboy cookies were the first “power bar” of their time, chock full of oatmeal, coconut, nuts, and milk chocolate chips. We named our version Ruidoso, after a mountain resort town that offers picturesque mountain views, a national forest, a gorgeous lake, and an annual cowboy festival. Saddle up, and try this hearty cookie!
